Sweet potato and chorizo sausage pancakes

Traditional tasty pancakes, this time with a savoury taste and with all the personality of chorizo. An appetiser with a difference that will become a snack you can’t do without.

Step by step:

1. Prick the skins of the sweet potatoes with a fork and cook them in the microwave. The cooking time will depend on the size of each one; check them every two minutes once they have been cooking for at least 30 minutes. Prick them with a knife; if the knife breaks the surface easily, they are ready. If you prefer, you can bake them at 180ºC for 45 minutes or until they are soft inside. 2. When they’re ready, peel and mash them, add the seasoning and mix them with the flour. Leave them to cool. Take a spoonful of the sweet potato mash, shape it into a ball with your hand and then flatten it into a patty. Take another spoonful and do the same again. Take one of the sweet potato mash patties, place one or two slices of chorizo on top and make a sandwich with another patty on top. Repeat the operation until you’ve used up all the mash mixture. 3. Mix the Greek yoghurt with the lemon juice (and a little grated lemon peel), the clove of chopped garlic and a little fresh parsley or coriander. 4. Heat a little oil in a non-stick frying pan and brown the pancakes on both sides. Serve them accompanied by the yoghurt sauce.
